  • 250 g. Pasta Toscana Penne Rigate
  • 150 g. fresh salmon
  • 1 ripe avocado
  • 1/2 white onion
  • Parsley
  • Ginger
  • Cherry tomatoes
  • Extra virgin olive oil
  • Salt and pepper

Chop the onion. Put some oil in a pan and put over low heat. Add the onion and just a little bit of cooking water from the pasta.

While the onion is browning season the salmon with salt and pepper. When the onion is ready add the salmon and slightly sear it for a couple of minutes. During cooking add some grated ginger. Turn off the heat and keep aside.

Peel the avocado and cut the pulp into small cubes. Put the pulp in a mixer with oil, salt and pepper and a tablespoon of cooking water from the pasta.

Cut the tomatoes in wedges. Drain the pasta and add it to the pan containing the salmon. Add the avocado sauce and another spoonful of cooking water and stir fry until creamy. Add the tomato wedges and serve.
